Spicy Cauliflower Bites

Ingredients
- 1 head cauliflower, broken into florets
- salt and ground black pepper to taste
- 4 cloves garlic, chopped, or more to taste

- 0.125 teaspoon red pepper flakes
Method
- Set your oven to 350 degrees F (175 degrees C) to preheat.
- In a large bowl, combine the cauliflower florets, chopped garlic, salt, and black pepper. Transfer this mixture onto a large piece of aluminium foil, wrap it securely, and place the parcel on a baking sheet.
- Bake the wrapped cauliflower in the preheated oven for 45 to 55 minutes, until it becomes tender. Move the contents to a bowl and mash them to your preferred texture.
- Stir the olive oil and skim milk into the mashed cauliflower. Spoon portions of the mixture into the cups of a muffin tin, then sprinkle each with shredded Cheddar cheese and 0.125 teaspoon of red pepper flakes.
- Return the tin to the oven and bake for 10 to 15 minutes, just until the cheese has melted. Allow the bites to cool for 2 minutes before taking them out of the pan.
