Spicy Cauliflower Balls
These bite-sized appetisers are a delicious way to enjoy vegetables, with a flavourful mix of cauliflower, jalapeños, and herb stuffing. They are shaped into small balls and baked until golden. Ideal for serving as a snack or party food, they can also be prepared in a casserole dish for a different presentation. The recipe yields a generous amount for sharing.
Ingredients
- 1/2 head cauliflower, chopped fine (about 3 cups)
- 4 cups herb seasoned stuffing mix
- 2 jalapenos, diced fine
- 3/4 cup butter, melted
- 2 tablespoons olive oil
- 1 onion, diced fine (I used vidailia)
- 3/4 teaspoon fresh ground black pepper
- 2 -3 cloves garlic, minced
- 1/2 teaspoon salt
- 6 eggs, beaten well
- 1/2 cup parmesan cheese, grated
Method
- Set your oven to 350°F to preheat.
- Place the olive oil, onions and chopped cauliflower into a large skillet.
- Cook the contents of the skillet for 5 minutes.
- Stir in the salt, black pepper, garlic and diced jalapenos.
- Allow the mixture to cook for another 5 minutes.
- Pour in the melted butter, then take the skillet off the heat.
- In a separate bowl, combine the beaten eggs, grated Parmesan cheese and herb seasoned stuffing mix.
- Fold the cooked cauliflower mixture into the egg and stuffing combination until thoroughly incorporated.
- Form the mixture into balls measuring about 3/4 inch in diameter.
- Arrange the balls on a lightly greased cookie sheet and bake for 20-25 minutes.
