Spicy Catalina Swai

Ingredients

  • 1 (4 ounce) fillet swai fish
  • 0.375 cup Catalina salad dressing
  • 1 teaspoon chile-garlic sauce (such as Sriracha®)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.375 teaspoon sea salt
  • 0.375 teaspoon crushed red pepper flakes
  • 0.25 teaspoon mustard powder
  • 0.25 teaspoon ground white pepper

Method

  1. Prepare your outdoor grill, heating it for medium-high heat.
  2. Lay a big sheet of aluminium foil flat and fold its edges up to make a shallow tray. Pour the 0.375 cup of Catalina dressing into its centre. Set the swai fillet in the dressing, turning it over to ensure it is fully covered.
  3. Combine the 1 teaspoon of chilli-garlic sauce with 0.5 teaspoon garlic powder, 0.5 teaspoon ground black pepper, 0.375 teaspoon sea salt, 0.375 teaspoon crushed red pepper flakes, 0.25 teaspoon mustard powder, and 0.25 teaspoon ground white pepper in a small bowl. Cover each side of the fish fillet with this spice blend. Enclose the coated fish and the dressing securely inside the foil packet.
  4. Grill the foil packet on the preheated grill. Cook until the fish is opaque and separates easily with a fork, which should take 8 to 12 minutes.
