Spicy Casserole Ole - Mexican Rice Casserole
This is a versatile Mexican-inspired casserole recipe originally found on a packet of instant rice. It features layers of seasoned ground beef, kidney beans, prepared rice and tomato sauce, all topped with melted cheese. You can easily adapt it with ingredients you have available, such as different beans, vegetables or meats. It bakes quickly for a convenient weeknight dinner.
Ingredients
- 1 lb ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 (15 ounce) can kidney beans, drained
- 1 cup instant rice, prepared
- 1 (8 ounce) can tomato sauce
- 2/3 cup shredded American cheese
Method
- Set your oven to heat to 375.
- Cook the ground beef with the chopped onion and green pepper in a skillet until browned, then drain any extra fat.
- Mix in the salt and the chili powder.
- In a 1 1/2 quart casserole dish, create layers by alternating the beef mixture, the drained kidney beans, the prepared instant rice and the tomato sauce.
- Cover the top layer with the shredded American cheese.
- Place the dish in the oven and bake for 15 minute.
