Spicy Cashew Pork
This one dish meal combines thinly sliced pork loin with crisp vegetables and roasted cashews. The pork is marinated in a mix of sherry, soy and sesame oil, then stir-fried with fresh ginger, garlic and red pepper flakes. Red bell pepper and snow peas are added for colour and crunch, all coated in a savoury, slightly sweet sauce. It's a complete meal that's ready in just over half an hour. Serve it with steamed rice for a satisfying dinner.
Ingredients
- 1 tablespoon medium-dry sherry
- 2 teaspoons cornstarch
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 3/4 lb boneless pork loin, thinly sliced,then cut into 2 by 1/4 inch strips
- 1 teaspoon sugar
- 3 tablespoons peanut oil
- 2 teaspoons minced peeled fresh ginger
- 2 teaspoons minced garlic
- 1/2 teaspoon dried hot red pepper flakes
- 1 large red bell pepper, cut into 1/4 inch thick strips
- 1/2 lb snow peas, trimmed
- 1 cup salted roasted cashews
Method
- Combine the sherry, cornstarch and one tablespoon of soy sauce in a bowl, then mix in the sesame oil.
- Place the pork strips into the marinade, stir to coat thoroughly, and allow it to stand for 10 minutes.
- In a separate small bowl, stir the sugar together with the remaining two tablespoons of soy sauce.
- Place a wok or a large nonstick skillet over high heat until it is very hot. a drop of water should sizzle and vanish instantly.
- Pour one and a half tablespoons of peanut oil into the hot wok, swirling it to coat the surface, then stir-fry one teaspoon of ginger, one teaspoon of garlic and a quarter teaspoon of pepper flakes for about 5 seconds until aromatic.
- Add the strips of red bell pepper to the wok and stir-fry them for 2 minutes.
- Put in the snow peas and cashews, continuing to stir-fry for 1 to 2 minutes until the peas are tender yet still crisp.
- Transfer the cooked vegetable and nut mixture to a bowl and set it aside.
- Heat the remaining one and a half tablespoons of peanut oil in the wok until it just begins to smoke, then stir-fry the rest of the ginger, garlic and pepper flakes for about 5 seconds until fragrant.
- Add the marinated pork to the wok and stir-fry for 2 to 3 minutes, separating the strips, until they are browned and just cooked through.
- Return the vegetables to the wok along with the sweetened soy sauce mixture, and stir-fry everything together for about 1 minute more until heated through.
- Serve the finished stir-fry accompanied by steamed rice.
