Spicy Cashew Chicken with Yakisoba Noodles
This vibrant stir-fry combines tender chicken pieces marinated in a blend of soy, peanut, and chilli-garlic sauces. The chicken is quickly cooked with bell peppers, shiitake mushrooms, and onions before being combined with toasted cashews and pre-prepared yakisoba noodles. The entire dish comes together in a single wok, resulting in a satisfying meal packed with texture and a spicy, savoury flavour. It's designed to serve eight people and takes just 35 minutes from start to finish.
Ingredients
- 1 lb boneless skinless chicken breast
- 1/2 cup soy sauce
- 1/2 cup thai peanut sauce
- 2 tablespoons chili-garlic sauce
- 2 tablespoons coconut milk
- 4 tablespoons peanut oil
- 1 large bell pepper
- 10 shiitake mushrooms
- 1 onion
- 1 cup cashews
- 16 ounces pre-prepared yakisoba noodles
Method
- Slice the chicken breast into bite-sized chunks.
- Whisk together the soy sauce, Thai peanut sauce, chilli-garlic sauce, and coconut milk in a large mixing bowl.
- Add the chicken pieces to the bowl, ensuring they are well coated, and allow them to marinate for a minimum of 20 minutes or for up to 2 hours.
- Take the chicken out of the marinade, setting the liquid aside for later use.
- Warm 2 tablespoons of the peanut oil in a wok or a large frying pan.
- Cook the chicken in the hot oil for 2-3 minutes until fully cooked, then transfer it to a plate.
- Pour the rest of the oil into the wok and cook the vegetables for 2-3 minutes until they are tender but still retain some crunch.
- Pour the reserved marinade into the wok with the vegetables and heat it through.
- Return the cooked chicken to the wok along with the cashews, mixing them with the sauce and vegetables.
- Continue to cook until everything is piping hot.
- Remove this mixture from the wok, leaving it unwashed.
- Heat the final tablespoon of peanut oil in the wok and stir-fry the yakisoba noodles until they are hot.
- Return all the cooked ingredients to the wok with the noodles and toss everything together to combine.
- Plate and enjoy the dish straight away.
