Spicy Carrot Sandwiches (Vegetarian)

Ingredients

  • 4 slices sourdough bread, grilled
  • 1 tablespoon extra-virgin olive oil
  • 2 large carrots, coarsely grated
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon caraway seed
  • salt
  • crushed red pepper flakes
  • 1/2 cup plus 2 tablespoons hummus
  • 1/4 cup Greek yogurt
  • cilantro leaf (fresh)
  • fresh ground black pepper

Method

  1. Warm the olive oil in a skillet.
  2. Cook the grated carrots, sliced garlic and caraway seeds with salt and crushed red pepper flakes until the carrots soften slightly, roughly 4 minutes.
  3. Allow the carrot mixture to cool.
  4. Take the grilled sourdough slices and cover them with a layer of hummus.
  5. Scatter the cooled carrot mixture over the hummus, then add spoonfuls of Greek yogurt.
  6. Finish with fresh cilantro leaves, a grind of black pepper and serve immediately.
  7. For a topped sandwich, you can grill an additional slice of bread for each serving, though these are intended to be open faced.
  8. As an alternative, you could use 2 whole wheat baguettes, each 8 inches long, split and grilled, in place of the sourdough.
