Spicy Carrot Sandwiches (Vegetarian)
This creative vegetarian sandwich offers a healthy twist, replacing mayo with hummus and adding protein from Greek yogurt. Grated carrots are quickly cooked with garlic and caraway seeds for a warm, spiced filling. Served open-faced on grilled sourdough bread and finished with fresh cilantro, it's a flavourful and satisfying lunch or snack option ready in just 25 minutes.
Ingredients
- 4 slices sourdough bread, grilled
- 1 tablespoon extra-virgin olive oil
- 2 large carrots, coarsely grated
- 2 garlic cloves, thinly sliced
- 1 teaspoon caraway seed
- salt
- crushed red pepper flakes
- 1/2 cup plus 2 tablespoons hummus
- 1/4 cup Greek yogurt
- cilantro leaf (fresh)
- fresh ground black pepper
Method
- Warm the olive oil in a skillet.
- Cook the grated carrots, sliced garlic and caraway seeds with salt and crushed red pepper flakes until the carrots soften slightly, roughly 4 minutes.
- Allow the carrot mixture to cool.
- Take the grilled sourdough slices and cover them with a layer of hummus.
- Scatter the cooled carrot mixture over the hummus, then add spoonfuls of Greek yogurt.
- Finish with fresh cilantro leaves, a grind of black pepper and serve immediately.
- For a topped sandwich, you can grill an additional slice of bread for each serving, though these are intended to be open faced.
- As an alternative, you could use 2 whole wheat baguettes, each 8 inches long, split and grilled, in place of the sourdough.
