This vibrant carrot puree is a flavourful vegetable side dish. Carrots are boiled until tender, then mashed and combined with a zesty blend of olive oil, vinegar, garlic, harissa and crushed caraway seeds. The finished puree is served cold, garnished with crumbled feta and sliced black olives, accompanied by Turkish bread for a complete and satisfying offering.

Spicy Carrot Puree

Ingredients

  • 750 g carrots, peeled and chopped
  • salt
  • 4 tablespoons olive oil
  • 3 tablespoons wine vinegar
  • 2 garlic cloves, crushed
  • 1 teaspoon harissa
  • 1 -1 1/2 teaspoon caraway seed, crushed
  • sliced black olives, to garnish
  • 100 g feta, to garnish
  • Turkish bread

Method

  1. Cook the peeled and chopped carrots in salted boiling water until they become tender. Drain the water away and mash the carrots thoroughly.
  2. Stir the olive oil, wine vinegar, crushed garlic cloves, harissa and crushed caraway seeds into the mashed carrot mixture.
  3. Top the puree with sliced black olives and crumbled feta cheese. Present it with Turkish bread on the side.
  4. Ensure the dish is served cold.
