Spicy Caribbean Black Beans and Rice
This Caribbean style dish combines black beans with rice for a hearty and flavourful meal. Onions, carrot and garlic are sautéed before being simmered with rice, black beans, sherry, vinegar and herbs. It makes a substantial main course or a satisfying side dish, ready in about 45 minutes.
Ingredients
- 1 teaspoon olive oil
- 1 1/4 cups diced onions
- 3/4 cup finely chopped carrot
- 1 tablespoon bottled minced garlic (this is not a mistake)
- 2 cups cooked rice
- 2 tablespoons dry sherry
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper (to taste)
- salt (to taste)
- 2 (15 ounce) cans black beans, rinsed and drained
- 2 bay leaves
Method
- Warm the olive oil in a large saucepan.
- Place the diced onions, chopped carrot and minced garlic into the pan and cook, stirring, for 10 minutes.
- Stir in the cooked rice along with all the remaining ingredients, put the lid on the pan, lower the heat and let it simmer for 5 minutes or until everything is hot.
- Take out and throw away the bay leaves before serving.
