Spicy Caribbean Black Beans and Rice

This Caribbean style dish combines black beans with rice for a hearty and flavourful meal. Onions, carrot and garlic are sautéed before being simmered with rice, black beans, sherry, vinegar and herbs. It makes a substantial main course or a satisfying side dish, ready in about 45 minutes.

Spicy Caribbean Black Beans and Rice

Ingredients

  • 1 teaspoon olive oil
  • 1 1/4 cups diced onions
  • 3/4 cup finely chopped carrot
  • 1 tablespoon bottled minced garlic (this is not a mistake)
  • 2 cups cooked rice
  • 2 tablespoons dry sherry
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper (to taste)
  • salt (to taste)
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 bay leaves

Method

  1. Warm the olive oil in a large saucepan.
  2. Place the diced onions, chopped carrot and minced garlic into the pan and cook, stirring, for 10 minutes.
  3. Stir in the cooked rice along with all the remaining ingredients, put the lid on the pan, lower the heat and let it simmer for 5 minutes or until everything is hot.
  4. Take out and throw away the bay leaves before serving.
