Spicy Cambodian Dipping Sauce

Ingredients

  • 4 garlic cloves, roughly chopped
  • 3 medium red chilies, seeded and roughly chopped
  • 3 teaspoons ground peanuts
  • 1 lime, juice of, large seeds removed
  • 4 tablespoons fish sauce
  • 2 teaspoons sugar
  • 4 tablespoons water

Method

  1. Combine the garlic, chillies, lime juice, sugar and water in a blender and process until a smooth paste forms.
  2. Stir the fish sauce into the blended mixture.
  3. Mix in the ground peanuts until fully incorporated.
  4. Feel free to adjust the flavour to your preference. For a saltier taste, add extra fish sauce, or include more water to dilute it.
  5. You can also add more sugar for sweetness or adjust the lime juice to control the sourness.
