Spicy Calf Fries
This is a traditional family barbecue recipe passed down directly. The calf fries are coated in a simple, spicy flour mixture before being fried until crisp and golden. They are best served with a cooling dip like ranch dressing or a horseradish sauce. Remember to have your butcher prepare the calf fries by removing the outer membrane prior to cooking. Ingredients
- 5 lbs flour
- 20 ounces black pepper
- 20 ounces cayenne pepper
- 10 lbs cleaned bull testicles
- 16 gal. beer
Method
- Combine the flour and both peppers inside a new, clean trash bag.
- Place the calf fries into the bag and shake it well to coat them completely.
- Separate the coated calf fries into several smaller batches for frying.
- Fry each batch in a turkey fryer set to 350 degrees until they turn a golden brown colour.
- Throughout the preparation and cooking process, be sure to taste the beer regularly to check its quality.
