Spicy Cajun Rub
This homemade Cajun seasoning blend combines paprika, black pepper, cumin, and brown sugar with aromatic spices like coriander, thyme, and allspice. It creates a versatile dry rub ideal for coating proteins before grilling, roasting, or pan-frying. The mixture yields approximately 1/3 cup and can be stored for future use. Apply it generously to chicken, beef, pork, or fish to add a deep, spicy flavour.
Ingredients
- 2 tablespoons paprika
- 1 tablespoon fresh coarse ground black pepper
- 1 tablespoon ground cumin
- 1 tablespoon brown sugar
- 1 tablespoon salt
- 2 teaspoons ground coriander
- 1 teaspoon dried thyme
- 1 teaspoon ground red pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground allspice
Method
- Combine every ingredient in a small bowl.
- Apply 1 tbsp of the rub for each pound of beef or pork, or use 2 tsp per pound of fish or chicken.
- Keep the leftover mixture in a container with a tight seal.
