Spicy Cajun Pasta
This recipe recreates a popular restaurant-style spicy Cajun pasta. It combines fettuccine with a rich sauce made from chicken stock, V-8 juice, and sautéed vegetables, all seasoned with cayenne. Sliced cooked chicken breast is served on top, finished with a sprinkle of Parmesan cheese and fresh parsley for a complete meal that's ready quickly.
Ingredients
- 10 ounces fettuccine pasta, cooked
- 1 cup spicy cajun pasta sauce, see below
- 1 tablespoon parmesan cheese
- 1 boneless skinless chicken breast, cooked and sliced
- 1 teaspoon parsley, Chopped
- 2 ounces olive oil
- 1 tablespoon garlic, chopped
- 1/2 cup onion, large chunks
- 1/2 cup green bell pepper, large chunks
- 1/2 cup red bell pepper, large chunks
- 1/8 teaspoon cayenne
- 1 cup chicken stock
- 1 cup v- 8 vegetable juice
- cornstarch
- salt and pepper
Method
- Warm the oil in a saute pan.
- Cook the garlic in the oil for 30 seconds.
- Put the onions in the pan and cook for one minute, then add the bell peppers and cook for a further minute.
- Pour in the chicken stock to deglaze the pan, letting it reduce by half.
- Stir in the V-8 juice and the cayenne pepper.
- Allow the mixture to reach a boil, then let it simmer for 10 minutes.
- Use cornstarch to thicken the sauce to your preferred texture.
- Add salt and pepper to taste.
- Mix the cooked pasta into the sauce and warm it thoroughly.
- Place the pasta on a dish and lay the sliced chicken breast on top.
- Finish with a dusting of Parmesan cheese and chopped parsley.
