This recipe recreates a popular restaurant-style spicy Cajun pasta. It combines fettuccine with a rich sauce made from chicken stock, V-8 juice, and sautéed vegetables, all seasoned with cayenne. Sliced cooked chicken breast is served on top, finished with a sprinkle of Parmesan cheese and fresh parsley for a complete meal that's ready quickly.

Spicy Cajun Pasta

Ingredients

  • 10 ounces fettuccine pasta, cooked
  • 1 cup spicy cajun pasta sauce, see below
  • 1 tablespoon parmesan cheese
  • 1 boneless skinless chicken breast, cooked and sliced
  • 1 teaspoon parsley, Chopped
  • 2 ounces olive oil
  • 1 tablespoon garlic, chopped
  • 1/2 cup onion, large chunks
  • 1/2 cup green bell pepper, large chunks
  • 1/2 cup red bell pepper, large chunks
  • 1/8 teaspoon cayenne
  • 1 cup chicken stock
  • 1 cup v- 8 vegetable juice
  • cornstarch
  • salt and pepper

Method

  1. Warm the oil in a saute pan.
  2. Cook the garlic in the oil for 30 seconds.
  3. Put the onions in the pan and cook for one minute, then add the bell peppers and cook for a further minute.
  4. Pour in the chicken stock to deglaze the pan, letting it reduce by half.
  5. Stir in the V-8 juice and the cayenne pepper.
  6. Allow the mixture to reach a boil, then let it simmer for 10 minutes.
  7. Use cornstarch to thicken the sauce to your preferred texture.
  8. Add salt and pepper to taste.
  9. Mix the cooked pasta into the sauce and warm it thoroughly.
  10. Place the pasta on a dish and lay the sliced chicken breast on top.
  11. Finish with a dusting of Parmesan cheese and chopped parsley.
