Spicy Cajun Meatloaf
This Cajun-inspired meatloaf delivers a spicy yet not overly hot flavour profile. It is built on the classic Holy Trinity of onions, celery, and green pepper, enhanced with cayenne, black, and white peppers. The mixture is baked and finished with a caramelised catsup glaze. The recipe makes 12 substantial pieces, each measuring 2 by 3 by 4 inches, and takes about 80 minutes to prepare and cook.
Ingredients
- 1 lb Italian sausage
- 2 lbs lean ground meat
- 1 cup crushed oats
- 3/4 teaspoon black pepper
- 3/4 teaspoon white pepper
- 3/4 teaspoon cayenne pepper
- 3/4 teaspoon salt
- 1 1/2 cups chopped onions
- 1 cup chopped green bell pepper
- 1/2 cup chopped celery
- 2 garlic cloves, chopped
- 2 cups catsup, divided use
Method
- Combine all ingredients, except for one cup of the catsup and the meats, in a large bowl.
- Add the Italian sausage and ground meat to the bowl and knead the mixture thoroughly.
- Transfer the meat mixture into three 4-by-8 inch glass or metal bread pans.
- Cover the pans tightly with foil and bake at 325 degrees for 30 minutes.
- After baking, pour away any accumulated grease from the pans.
- Return the pans to the oven and bake for a further 30 minutes.
- Once more, pour off any grease that has been released.
- Take off the foil covering the pans.
- Spread the reserved cup of catsup over the tops and sides of the meatloaves.
- Bake for about 10 minutes, watching carefully, until the catsup starts to caramelise and darken slightly.
- Remove the pans from the oven and allow the meatloaves to rest.
- Slice the contents of each bread pan into four pieces, each 2 inches wide.
