Spicy Cajun Marinade & Baste
This robust and spicy marinade is perfect for adding flavour to chicken, pork, beef, or shrimp. It can also be used as a basting sauce during grilling or oven roasting. The recipe yields approximately 3/4 cup and requires about 65 minutes to prepare, including marinating guidance. A note on using optional citrus juice is included to ensure the best texture for your meat.
Ingredients
- 1/2 cup olive oil
- 1/4 cup vinegar
- 3 garlic cloves, crushed
- 1 tablespoon onion powder
- 1 teaspoon oregano, hand crushed
- 1 teaspoon thyme
- 2 teaspoons seasoning salt
- 1 tablespoon cayenne pepper
- 2 teaspoons paprika
- 1 teaspoon black pepper
- 1 tablespoon horseradish
- 1/4-1/2 cup lime juice (optional last hour) or 1/4-1/2 cup lemon juice (optional last hour)
Method
- Combine all ingredients except for the optional juice in a blender or a jar with a secure lid. Blend or shake until the mixture is fully combined and smooth.
- Pour the blended marinade into a resealable plastic bag. Add your chosen meat or seafood, seal the bag, and place it in the refrigerator.
- Remember to turn the bag over several times throughout the marinating period to ensure even coverage.
- Recommended marinating times are as follows.
- Beef requires 2-4 hours.
- Chicken or pork needs 1-2 hours.
- Shrimp should marinate for 1/2 hour.
- To use as a basting sauce, apply it to meat or kabobs with a brush while grilling or roasting.
- You can also incorporate small quantities into Cajun or Creole dishes for extra heat, adjusting the overall salt content of the finished dish accordingly.
