Spicy Cajun Cabbage and Noodles

Ingredients

  • 1 lb sausage
  • 1 small sweet onion
  • 1 medium cabbage
  • 1 (1 small) bag egg noodles
  • 1 can stewed tomatoes
  • 1 cup salsa
  • 2 tablespoons cajun seasoning
  • 1 teaspoon garlic powder
  • 1/4 cup sugar
  • salt and pepper

Method

  1. Cook the sausage, breaking it into small pieces as it browns.
  2. Stir in the chopped cabbage, stewed tomatoes, salsa, and all the spices.
  3. Let the mixture simmer gently for 15-20 minutes.
  4. Pour one cup of water into the pot and add the egg noodles.
  5. Continue cooking until the noodles have softened.
  6. Switch off the heat and place a lid on the pot.
  7. Leave the dish to stand for another 30 minutes before you serve it.
  8. The taste improves the longer it is left to sit.
