Spicy Cajun Cabbage and Noodles
This sweet and spicy one-dish meal originated from a happy kitchen accident with leftover cabbage. It combines savoury sausage with tender cabbage and egg noodles, all simmered in a rich tomato sauce seasoned with Cajun spices and a touch of sugar. The flavours develop beautifully as it rests, making it ideal for making ahead. It yields 4-6 generous servings and takes about 60 minutes to prepare.
Ingredients
- 1 lb sausage
- 1 small sweet onion
- 1 medium cabbage
- 1 (1 small) bag egg noodles
- 1 can stewed tomatoes
- 1 cup salsa
- 2 tablespoons cajun seasoning
- 1 teaspoon garlic powder
- 1/4 cup sugar
- salt and pepper
Method
- Cook the sausage, breaking it into small pieces as it browns.
- Stir in the chopped cabbage, stewed tomatoes, salsa, and all the spices.
- Let the mixture simmer gently for 15-20 minutes.
- Pour one cup of water into the pot and add the egg noodles.
- Continue cooking until the noodles have softened.
- Switch off the heat and place a lid on the pot.
- Leave the dish to stand for another 30 minutes before you serve it.
- The taste improves the longer it is left to sit.
