Spicy Cajun Bayou Grilled Cheese
This grilled cheese sandwich brings a taste of Cajun flavour to a classic lunch. It layers spicy andouille sausage with pepper jelly and two types of cheese between slices of crusty bread. The whole sandwich is grilled until golden and the cheese is perfectly melted. It's a great use for leftover sausage and makes a quick, hearty meal.
Ingredients
- 4 tablespoons butter, softened
- 8 slices crusty Italian bread
- 6 tablespoons pepper jelly
- 8 slices monterey jack pepper cheese
- 2 links andouille sausages, grilled, each link cut into quarters and split lengthwise
- 8 slices muenster cheese
Method
- Take the softened butter and spread it onto one side of every bread slice. On the opposite side of four slices, spread the pepper jelly.
- For the slices with jelly, layer two slices of the pepper jack cheese and two pieces of the grilled sausage. Place two slices of Muenster cheese on top of the sausage, then finish with the remaining bread slices, ensuring the buttered sides face outwards.
- Place a large skillet or griddle on the cooker to preheat.
- Cook each sandwich for 2 to 3 minutes per side. They are ready when the bread is golden and the cheese inside has melted.
- Enjoy the sandwiches straight away.
