Spicy Cabbage
This vibrant vegetable dish features thinly sliced cabbage cooked with onion, garlic, tomatoes, and bell pepper. Aromatic spices including cumin, coriander, and turmeric are fried to release their flavour, while jalapeño peppers add a gentle heat. A splash of vinegar finishes the dish, which is simmered until the cabbage is perfectly tender. It makes an excellent side for a crowd and is prepared in a single skillet.
Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 jalapeno peppers, seeded and chopped
- 1 bell pepper, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 2 medium tomatoes, coarsely chopped
- 1 small green cabbage, thinly sliced
- 1 tablespoon vinegar
Method
- Warm the vegetable oil in a 12-inch skillet until it is hot.
- Add the chopped onion, minced garlic, chopped jalapeño peppers, chopped bell pepper, ground cumin, ground coriander, ground turmeric, and salt to the hot oil.
- Cook these ingredients, stirring frequently, until the onion has softened, which should take about 5 minutes.
- Mix in the coarsely chopped tomatoes and the thinly sliced green cabbage.
- Bring the contents of the skillet to a boil, then lower the heat.
- Place a lid on the skillet and let it simmer until the cabbage becomes tender, for approximately 12 minutes.
- Finish by stirring the tablespoon of vinegar into the cooked cabbage.
