⏱ 65 mins 🍽 Serves 6 🌶 american 🏷 Main course

This American dinner soup gets its gentle heat from cayenne pepper. Bacon, onion and garlic form a savoury base, simmered with chicken broth and coarsely chopped cabbage. Italian-style stewed tomatoes add depth, creating a hearty and flavourful dish that is ready in about 65 minutes and serves six people perfectly with some crusty bread.

Spicy Cabbage Soup

Ingredients

  • 0.5 pound bacon, cut into 1/2 inch pieces
  • 0.5 onion, chopped
  • 2 cloves garlic, chopped
  • 2 quarts low-sodium chicken broth
  • 0.25 teaspoon cayenne pepper, or to taste
  • salt and ground black pepper to taste
  • 0.5 medium head cabbage, cored and coarsely chopped
  • 1 (14.5 ounce) can Italian-style stewed tomatoes, undrained, cut up

Method

  1. Place a stockpot over heat. Cook the bacon pieces, stirring, until they are lightly browned, 3 to 5 minutes. Add the chopped onion and garlic. Cook while stirring occasionally until the onion is transparent, 5 to 7 minutes. Pour in the broth, then add cayenne pepper, salt, and black pepper. Bring the mixture to a boil and let it cook for about 5 minutes.
  2. Add the chopped cabbage to the pot. Let it simmer until the cabbage has wilted, 10 to 15 minutes. Mix in the stewed tomatoes along with their liquid. Bring the soup back to a boil and cook for about 5 minutes. Lower the heat, cover the pot, and simmer, stirring frequently, for 15 to 30 minutes.
