Spicy Cabbage Rolls - Low Carb
These low carb cabbage rolls are packed with flavour from a mix of ground beef and breakfast sausage. The filling includes onion, cauliflower, parmesan, and eggs, all bound together with a little spaghetti sauce. The rolls are simmered in more sauce until perfectly cooked. This one dish meal is ideal for those avoiding rice or bread, offering a satisfying and hearty dinner option for six people.
Ingredients
- 1 head cabbage
- 2 tablespoons butter or 2 tablespoons oil
- 1 lb ground beef
- 1 lb breakfast sausage, regular
- 1 large yellow onion, finely chopped
- 1/2 cup chopped cauliflower
- 1/2 cup fresh parmesan cheese, shredded
- 2 eggs
- 2 (14 ounce) cans spaghetti sauce
Method
- Core the cabbage and place it in boiling water with butter or oil to soften. While it softens, combine the ground beef, breakfast sausage, chopped onion, cauliflower, shredded parmesan, eggs, and half a cup of the spaghetti sauce in a bowl.
- Take the softened outer leaves from the cabbage. Use a sharp knife to cut away the tough central rib from each leaf.
- Cut each cabbage leaf in half. Place a generous tablespoon of the meat mixture onto each leaf half and roll it up, folding in the sides as you go.
- Put each finished roll into a large lidded skillet. Keep making rolls until all the meat mixture is used.
- You may need a second smaller pan if you have too many rolls for the first skillet.
- Pour the remaining spaghetti sauce over all the cabbage rolls. Place the lid on the skillet and cook for 30 minutes, or until the meat is fully cooked through.
- Finish the dish by sprinkling shredded parmesan cheese over the hot rolls before serving.
