Spicy Butterscotch Pudding

Ingredients
- 2 tbsp cornflour
- 110g light brown sugar
- 1 pinch salt
- 240ml milk
- 240ml half-and-half
- 2 tsp vanilla extract
- 1 tbsp butter
- 1/2 tsp ground cinnamon
- 1 dash cayenne pepper
Method
- In a saucepan, combine the cornflour, light brown sugar and salt, whisking until no lumps remain. Pour in the milk and half-and-half, then stir everything together.
- Place the saucepan on the hob and bring the contents to a simmer, whisking continuously. Continue to cook until the pudding mixture starts to thicken noticeably.
- Take the pan off the heat. Mix in the vanilla extract, butter, ground cinnamon and cayenne pepper until fully incorporated. Divide the pudding between four individual bowls and refrigerate for 1 hour prior to serving.
