- Combine the chili powder and lemon juice in a small bowl.
- Place the prepared squash cubes into a large microwave safe bowl and pour the lemon mixture over them, tossing to coat thoroughly.
- Arrange the coated cubes around the sides of the bowl to promote even cooking.
- Cover the bowl and microwave on high (100%) for 14 minutes.
- Test for doneness by piercing a few cubes with a sharp knife tip or a toothpick. they should be tender.
- If needed, re cover the bowl and continue to microwave at 2 minute intervals until the squash is cooked through.
- For a hot serving, spoon the squash onto a plate and serve straight away.
- To serve cold, transfer the cooked squash to the refrigerator and chill until cool.
