Spicy Butternut Squash Chili
This celebrated chilli combines ground beef and cubed butternut squash for a hearty, flavourful meal. It is simmered slowly with a blend of tomatoes, chipotle peppers, and spices, resulting in a dish that balances sweet and spicy notes perfectly. Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 tablespoons minced garlic
- 1 pound ground beef
- 1 pound cubed butternut squash
- 1 (16 ounce) package frozen mixed vegetables
- 2 (10 ounce) cans diced tomatoes with green chile peppers
- 1 (14.5 ounce) can diced tomatoes
- 1 cup chicken broth
- 1 (7 ounce) can chipotle peppers in adobo sauce, chopped
- 1 (6 ounce) can tomato paste
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 0.5 teaspoon cayenne pepper, or to taste
- 1 tablespoon brown sugar, or to taste
Method
- Warm the olive oil in a large pot. Cook the chopped onion and minced garlic, stirring until the onion softens, for about 5 minutes. Introduce the ground beef and continue to cook, breaking it up, until it is fully browned, which takes 5 to 7 minutes.
- Move the beef mixture into a slow cooker. Add the cubed butternut squash and the frozen mixed vegetables. Pour in the diced tomatoes with green chile peppers, the can of diced tomatoes, chicken broth, chopped chipotle peppers in adobo, tomato paste, chili powder, cumin, garlic powder, cayenne pepper, and brown sugar. Stir everything to combine thoroughly.
- Select the High setting on the slow cooker until the contents begin to simmer. Then place the lid on, switch the heat to Low, and allow it to cook for 8 hours to overnight.
