Spicy Buttermilk Coffee Cake

Ingredients

  • 2 1/2 cups self rising flour
  • 2 cups brown sugar, packed
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1/2 cup walnuts (or pecans, finely chopped )

Method

  1. Heat your oven to 350 degrees F and prepare a 10 inch bundt pan with a non-stick cooking spray.
  2. Combine the self rising flour, packed brown sugar and salt in a large bowl. Use a fork or pastry cutter to blend in the shortening until the mixture resembles coarse crumbs. Remove 1/2 cup of this mix and set it aside. Mix the baking soda, ground cinnamon and ground nutmeg into the remaining crumb mixture.
  3. In a separate, smaller bowl, lightly whisk together the beaten eggs and buttermilk. Pour this wet mixture gradually into the crumb and spice blend, stirring just until everything is incorporated and no dry flour remains.
  4. Scatter the reserved crumb mixture and your finely chopped walnuts or pecans evenly across the base of the prepared bundt pan. Pour the batter over the top, then tap the pan gently on the counter to level the surface.
  5. Place the pan in the oven and bake for 50-55 minutes, checking for doneness with a toothpick. Let the cake cool in its pan for 10-15 minutes before turning it out onto a wire rack. It can be enjoyed warm or once completely cooled.
