Spicy Buffalo Onion Rings and Blue Cheese Dip

Ingredients

  • Vegetable oil, for frying
  • 1 carrot, sliced
  • Blue cheese dip, recipe follows
  • 3 extra-large yellow onions
  • 1 2/3 tsp salt
  • 2 tsp dry mustard
  • 2 tsp black pepper
  • 1 tsp white pepper
  • 2 tbsp cayenne pepper
  • 1 tbsp Cajun spice mix
  • 1 tbsp baking powder
  • 840g plain flour
  • 1.25L whole milk
  • 4 eggs
  • 1 stalk celery, sliced
  • For the blue cheese dip
  • 448g sour cream
  • 240ml buttermilk
  • 200g blue cheese
  • 1 tbsp minced serrano chilli
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp hot sauce
  • Salt and freshly ground black pepper

Method

  1. Pour vegetable oil into a large heavy saucepan to a depth of 25-8cm and begin to heat it. You will need the oil to reach 180C for frying.
  2. Take a large bowl and whisk together the eggs and whole milk. Incorporate the plain flour and baking powder, mixing everything completely with a hand held mixer. Pass the batter through a strainer to eliminate lumps. Adjust the consistency with extra milk if a thinner coating is preferred.
  3. Combine the Cajun spice mix, cayenne pepper, white pepper, black pepper, dry mustard, and 1 2/3 tsp salt in a separate small bowl. Stir this spice blend into the prepared batter.
  4. Slice the yellow onions into thick rounds. Dip each onion slab into the batter to coat it fully.
  5. Fry the battered onions in batches in the hot oil until they turn a golden brown colour.
  6. For the blue cheese dip, place the sour cream, buttermilk, blue cheese, minced serrano chilli, balsamic vinegar, Worcestershire sauce, and hot sauce into a large bowl. Mix all the ingredients until well combined. Season the dip with salt and freshly ground black pepper according to your taste.
  7. Serve the hot onion rings with the blue cheese dip, sliced carrot, and sliced celery.
