Spicy Buffalo Chicken Burgers
These chicken burgers are packed with the classic spicy flavour of buffalo sauce. The patties are made from ground chicken mixed with hot sauce and butter, then pan-fried until perfectly cooked. They are served on toasted buns with a homemade blue cheese and mayonnaise spread, finished with a sprinkle of fresh chopped celery for a crisp, cooling contrast. Optional lettuce and tomato add extra freshness.
Ingredients
- 1/4 cup milk
- 1/8 teaspoon salt
- 1/3 cup plain fresh breadcrumbs (see note)
- 24 ounces ground chicken
- 1/2 cup hot sauce (such as Tabasco), divided
- 4 tablespoons (2 ounces) unsalted butter, melted and cooled
- 2 ounces blue cheese, crumbled
- 1/2 cup mayonnaise
- 1 teaspoon vegetable oil
- 4 hamburger buns
- 2 stalks celery, finely chopped (about 2/3 cup)
- Iceberg lettuce for garnish, optional
- Tomato for garnish, optional
Method
- In a medium bowl, combine the breadcrumbs with the milk and salt to moisten them. Gently mix in the ground chicken, 1/4 cup of the hot sauce, and the cooled melted butter using your fingers, being careful not to overmix. Refrigerate the mixture for about 30 minutes until it firms up slightly, then form it into four patties slightly wider than your buns.
- Mix the crumbled blue cheese into the mayonnaise and refrigerate this sauce. Heat 1 teaspoon of vegetable oil in a skillet until it shimmers. Cook the patties until they reach an internal temperature of 155°F or 68°C, which should take about 3 to 4 minutes per side. As you cook the second side, brush it with the remaining hot sauce. Move the cooked patties to a plate and wipe the skillet clean with a paper towel.
- Place the skillet back on the heat and toast the cut sides of the hamburger buns in the dry pan. To assemble, spread the blue cheese mayo on the buns, add the cooked patties, and top with the chopped celery. Add lettuce and tomato for garnish if you like.
