Spicy Brown Mustard
This recipe creates a sharp and aromatic brown mustard, ideal for enhancing sandwiches and charcuterie. It involves soaking brown mustard seeds in vinegar before blending them with a selection of warm spices. The mixture is then left to mature, developing its full flavour over a few days. Ingredients
- 1 cup white wine vinegar
- 3/4 cup brown mustard seeds
- 2 teaspoons Kosher salt
- 1/2 teaspoon turmeric
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Water, as needed
Method
- Combine the mustard seeds and vinegar in a small bowl or container, cover it, and allow it to soak at room temperature for 1 day.
- Move the soaked seeds and their liquid into a blender jar. Incorporate the salt, turmeric, allspice, ginger, cinnamon, and nutmeg. Blend the mixture until smooth, thinning it with 2 tablespoons of water at a time if required. Place the mustard in a sealed container and refrigerate it for 2 to 3 days prior to using.
