Spicy Breakfast Sausage
This homemade breakfast sausage recipe combines ground pork, beef, and veal with garlic, scallions, green pepper, and a blend of spices including cumin, thyme, and fennel. The mixture is shaped into logs, chilled, then sliced and fried into patties. It yields 10 to 12 servings and takes about 40 minutes to prepare, offering a much tastier and less greasy alternative to pre-packaged sausages. Perfect with eggs, pancakes, or French toast.
Ingredients
- 1 lb ground pork
- 1 lb ground beef
- 1 lb ground veal
- 4 garlic cloves, minced
- 1 bunch scallion, minced (green onions, white part & 2-inch green)
- 1 large green bell pepper, cored seeded & minced
- 2 teaspoons ground cumin
- 1 teaspoon dried thyme
- 1 teaspoon fennel seed
- 1 pinch ground nutmeg
- red pepper flakes, to taste
- salt, to taste
- unsalted butter, for frying
Method
- Combine the ground pork, beef, and veal completely in a large bowl.
- Stir in the minced garlic, scallions, and green bell pepper along with the cumin and thyme.
- Add the fennel seed, a pinch of nutmeg, red pepper flakes, and salt according to your preference.
- Use your hands to blend everything together until well incorporated.
- Cook a little of the mixture in a skillet until it is fully cooked through.
- Sample this cooked piece and modify the seasoning in the main mixture if needed.
- Separate the meat blend into two equal portions. Shape each portion into a log roughly 7 inches long and 2 inches wide.
- Individually wrap each log in plastic film and place in the fridge for at least 3 hours or for up to 2 days.
- Slice the chilled sausage logs into pieces about 1/2 inch thick.
- Cook the patties in a skillet with a small amount of butter until they are nicely browned on each side.
- Enjoy these sausages alongside eggs, pancakes, or French toast.
