Spicy Breakfast Quesadillas

Ingredients

  • 2 (4 ounce) links spicy pork breakfast sausage
  • 3 large eggs
  • 2 tablespoons milk
  • 3 tablespoons chopped green onions
  • salt and ground black pepper to taste
  • 4 (6 inch) flour tortillas
  • 2 tablespoons nacho cheese sauce, or to taste

Method

  1. Coat a skillet with cooking spray and warm it. Place the sausages in the pan, turning frequently, until they are browned and fully cooked, 12 to 16 minutes. Their internal temperature should reach 160 degrees F (70 degrees C) when checked. Take them out and chop once cooled.
  2. Whisk the eggs together with the milk in a small bowl.
  3. Apply cooking spray to a separate small skillet and place it on the heat. Pour in the egg mixture along with the green onions, salt, and pepper. Cook until the edges firm up, then flip gently with a spatula to scramble, 3 to 5 minutes. Transfer the eggs to a plate and clean the skillet.
  4. Set one tortilla in the cleaned skillet. Spread 1/2 of the nacho cheese sauce over it, followed by 1/2 of the sausage and 1/2 of the eggs. Cover with a second tortilla. Cook, flipping once carefully, until both sides are lightly browned, about 5 minutes. Move to a plate and repeat for the second quesadilla.
