These satisfying breakfast burritos combine fluffy scrambled eggs with spicy jalapeno, creamy black beans and melted Monterey Jack cheese. Wrapped in a warm tortilla with fresh cilantro, scallions and salsa, they offer a hearty start to the day. Spicy Breakfast Burritos

Ingredients

  • 4 large tortillas (10 inch)
  • 8 eggs
  • 1 jalapeno pepper, minced
  • 2 tablespoons water
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon butter
  • 1 cup monterey jack cheese, shredded
  • 15 ounces black beans, rinsed and drained
  • 1/2 cup cilantro, chopped
  • 1/4 cup scallion, chopped
  • 1/2 cup salsa
  • additional salsa
  • additional sour cream

Method

  1. Set your oven to heat to 350.
  2. Warm the tortillas by placing them in a large covered casserole dish or wrapping them lightly in aluminium foil and putting them in the oven.
  3. Lightly beat the eggs, minced jalapeno and water together in a large mixing bowl.
  4. Season the egg mixture with salt and pepper according to your preference.
  5. Melt the butter in a large skillet and cook the egg mixture, stirring, until it is fully set.
  6. To build each burrito, spread one quarter of the cooked eggs down the centre of a warm tortilla and layer on a quarter of the cheese, beans, scallions, cilantro, salsa and sour cream. Include extra salsa and sour cream if you like.
  7. Fold each tortilla by bringing one side just over the filling, then rolling it up tightly to form a bundle. Repeat this process with the remaining tortillas and fillings. Serve the finished burritos with more salsa and sour cream on the side.
