Spicy Bratwurst Linguine
This dish was created to use up leftover barbecued bratwurst, resulting in a favourite spicy pasta. Bratwursts are sliced and cooked with a medley of onion, bell pepper, mushrooms, and cherry tomatoes in a garlicky oil base. The sauce is spiced with cayenne and red pepper flakes, then simmered with crushed tomatoes and Parmesan. It's all tossed with linguine for a hearty meal. Fresh Italian sausage can be used as a tasty alternative.
Ingredients
- 2/3 cup olive oil
- 2 tablespoons garlic, chopped
- 1 medium onion, rough chop
- 1 green bell pepper, rough chop (or any color)
- 1 (4 ounce) can sliced mushrooms, fresh are even better
- 8 cherry tomatoes, halved
- 8 spicy bratwursts or 8 regular bratwursts
- 2 tablespoons cayenne pepper (more or less to taste)
- 3 tablespoons crushed red pepper flakes (to taste)
- 3 -4 tablespoons italian seasoning
- 1 (8 ounce) can crushed tomatoes
- 2/3 cup parmesan cheese
- 4 ounces linguine
Method
- Warm the olive oil in a large skillet and start a pot of water boiling for the linguine.
- Stir the chopped garlic into the oil for 2 minutes.
- Place the onion, mushrooms, and bell pepper into the skillet.
- Mix in the cayenne pepper, crushed red pepper flakes, and Italian seasoning, stirring for 3 minute.
- Slice the bratwursts on an angle and add them to the pan with the halved cherry tomatoes, allowing them to cook for 5 min.
- Pour in the crushed tomatoes followed by 1/3 cup of the Parmesan cheese, stirring to combine, then let it simmer for 5 min or so.
- Serve the sauce over the cooked linguine, garnishing with fresh green peppers and the remaining Parmesan cheese.
