Spicy Bolognese Sauce

This robust Bolognese sauce is packed with flavour and a gentle kick from fresh chilli. It's a simple one-dish meal where lean beef is browned with onion, garlic, celery and chilli, then simmered with tomatoes, red wine and herbs for about an hour until rich and thick. Toss it with your favourite pasta for a satisfying dinner that serves five to six people. The sauce freezes beautifully for future meals.

Spicy Bolognese Sauce

Ingredients

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 celery rib, diced
  • 1 chili, Red 2 inches long, chopped fine
  • 500 g lean ground beef
  • 1 (14 ounce) can tomatoes, chopped
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup red wine
  • 1/4 cup water
  • 1 1/2 stock cubes, Beef
  • 1 tablespoon tomato sauce
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 pinch thyme
  • ground pepper
  • salt
  • 500 g spaghetti or 500 g your favourite pasta

Method

  1. Warm the oil in a medium saucepan and gently cook the onion, garlic, celery and chilli until softened. For less heat, remove the seeds from the chilli before chopping.
  2. Introduce the lean ground beef to the pan, using a fork to break it apart as it cooks until browned.
  3. Pour in the chopped tomatoes with their juice, along with all the remaining ingredients. Leave to simmer, stirring occasionally, for approximately an hour or until the sauce has thickened.
  4. Prepare your spaghetti or chosen pasta according to package directions until al dente. Drain thoroughly without rinsing with hot water to help the sauce adhere. Combine the sauce with the pasta, stirring well, and serve straight away alongside tomato salad and crusty bread.
  5. Any leftover sauce can be frozen without difficulty.
