Spicy Bok Choy in Garlic Sauce
This vibrant Asian side dish comes together in a flash with a simple stir-fry. Crisp bok choy is cooked until just tender, then coated in a glossy, flavourful sauce made from garlic, ginger, oyster sauce, soy and a touch of brown sugar with red pepper flakes for a gentle heat. It's a delicious umami-packed accompaniment that's ready in about 20 minutes.
Ingredients
- 1 pound bok choy
- 0.25 cup water
- 2 cloves garlic, minced
- 1 tablespoon oyster sauce
- 1 tablespoon light soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon grated fresh ginger root
- 0.125 teaspoon crushed red pepper flakes
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
Method
- Discard the ends of the bok choy and chop it, separating the white stems from the green leaves. Wash the pieces and ensure they are dried thoroughly.
- Combine the water, minced garlic, oyster sauce, soy sauce, brown sugar, grated ginger and crushed red pepper flakes in a mixing bowl.
- Warm the vegetable and sesame oils together in a wok. Cook the bok choy stems for 2 to 3 minutes until they begin to lighten in colour. Add the leaves and stir-fry for 1 to 2 minutes more until they soften. Transfer the cooked bok choy to a dish.
- Pour the prepared sauce into the wok and place it back on the heat. Stir the sauce continuously for about 3 minutes until it thickens a little.
- Drizzle the thickened sauce over the bok choy and gently toss everything together to combine.
