Spicy Black-Eyed Pea Skillet
This is a simple and economical one dish meal that comes together quickly. It features a base of ground beef or a vegetarian alternative cooked with onions and green pepper, combined with spicy black-eyed peas and tomatoes. The mixture simmers for 20 minutes to develop the flavours. It's a versatile dish that can be served as a main or a side and freezes beautifully for future meals.
Ingredients
- 1 lb ground beef (or vegetarian meat alternative, see note above)
- 3 medium onions, chopped
- 1 green bell pepper, chopped
- 2 (16 ounce) cans spicy black-eyed peas, drained (I prefer the Ranch Style brand, but use Trappey's if I can't get them)
- 1 (14 1/2 ounce) can whole tomatoes, undrained and coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Method
- Cook the ground beef with the chopped onion and green bell pepper in a large skillet until the meat is browned and the vegetables are soft.
- Remove any extra fat from the skillet.
- Stir in the drained black-eyed peas, the coarsely chopped tomatoes with their juice, salt, and black pepper.
- Combine everything thoroughly.
- Allow the mixture to reach a boil.
- Turn the heat down to low and let it simmer for 20 minutes, giving it a stir now and then.
- This makes a complete supper when paired with corn muffins and chilled spiced peaches.
- If you cannot find spicy black-eyed peas, you may add chopped jalapenos to regular black-eyed peas according to your preference.
- This recipe is suitable for freezing.
