Spicy Black-Eyed Pea Skillet

Ingredients

  • 1 lb ground beef (or vegetarian meat alternative, see note above)
  • 3 medium onions, chopped
  • 1 green bell pepper, chopped
  • 2 (16 ounce) cans spicy black-eyed peas, drained (I prefer the Ranch Style brand, but use Trappey's if I can't get them)
  • 1 (14 1/2 ounce) can whole tomatoes, undrained and coarsely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method

  1. Cook the ground beef with the chopped onion and green bell pepper in a large skillet until the meat is browned and the vegetables are soft.
  2. Remove any extra fat from the skillet.
  3. Stir in the drained black-eyed peas, the coarsely chopped tomatoes with their juice, salt, and black pepper.
  4. Combine everything thoroughly.
  5. Allow the mixture to reach a boil.
  6. Turn the heat down to low and let it simmer for 20 minutes, giving it a stir now and then.
  7. This makes a complete supper when paired with corn muffins and chilled spiced peaches.
  8. If you cannot find spicy black-eyed peas, you may add chopped jalapenos to regular black-eyed peas according to your preference.
  9. This recipe is suitable for freezing.
