Ingredients
- 1/2 cup onion, chopped

- 2 tablespoons water
- 15 ounces canned black beans
- 14 1/2 ounces canned stewed tomatoes
- 1/4 teaspoon ground red pepper
- 2 cups cooked brown rice
Method
- Cook the chopped onion and garlic in water in a medium saucepan until tender, ensuring they do not brown.
- Gently stir in the drained black beans, the undrained stewed tomatoes, and the ground red pepper.
- Allow the mixture to come to a boil, then lower the heat and let it simmer without a lid for 15 minutes.
