Spicy Black Bean Tomato Sauce
This hearty sauce was a student staple, offering a satisfying meal in minutes. It combines black beans with zesty diced tomatoes and green chillies for a kick, simmered into a thick, rich consistency. Traditionally served over wagon wheel pasta, it's versatile enough for other large pasta shapes or as a topping. A garnish of grated pepper jack cheese adds a creamy finish. The entire dish comes together in about 20 minutes.
Ingredients
- 1 teaspoon canola oil
- 1 onion, chopped
- 2 garlic cloves, crushed and minced
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can diced tomatoes and green chilies (with chilies and onions such as Del Monte's Diced with Zesty Mild Green Chilies)
- 1 teaspoon ground red pepper (to taste)

Method
- Warm the canola oil in a large frying pan.
- Place the chopped onion and minced garlic into the pan.
- Cook while stirring until they have softened, which should take about 2 minutes.
- Pour in the drained black beans, the can of diced tomatoes with green chillies, and the ground red pepper.
- Allow the mixture to simmer until it thickens and is thoroughly heated, roughly 5-10 minutes.
- If using, sprinkle servings with grated pepper jack cheese and spoon over your chosen pasta.
