Spicy Black Bean Tomato Sauce

Ingredients

  • 1 teaspoon canola oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed and minced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can diced tomatoes and green chilies (with chilies and onions such as Del Monte's Diced with Zesty Mild Green Chilies)
  • 1 teaspoon ground red pepper (to taste)
  • monterey jack pepper cheese, grated (for garnish) (optional)

Method

  1. Warm the canola oil in a large frying pan.
  2. Place the chopped onion and minced garlic into the pan.
  3. Cook while stirring until they have softened, which should take about 2 minutes.
  4. Pour in the drained black beans, the can of diced tomatoes with green chillies, and the ground red pepper.
  5. Allow the mixture to simmer until it thickens and is thoroughly heated, roughly 5-10 minutes.
