Spicy Black Bean Taco Bake

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 pound ground beef
  • 1 (12 ounce) can corn, drained
  • 1 (14 ounce) can black beans
  • 1 cup biscuit baking mix (such as Bisquick®)
  • 0.5 cup milk
  • 0.5 cup shredded sharp Cheddar cheese
  • 1 egg
  • 2 tablespoons diced jalapeno peppers
  • 0.5 cup salsa
  • 0.5 cup sour cream

Method

  1. Set your oven to heat to 350 degrees F (175 degrees C).
  2. Warm the olive oil in a large skillet. Cook the chopped onion, stirring, until it softens, about 5 minutes. Introduce the ground beef and continue to cook, stirring, for 5 to 7 minutes until it is no longer pink.
  3. Transfer the cooked onion and beef mixture into an 8-inch baking dish that has not been greased. Arrange the drained corn and black beans in a layer over the meat.
  4. In a separate bowl, combine the biscuit baking mix, milk, shredded Cheddar cheese, egg and diced jalapeno peppers. Mix these until they are well blended, then spread this batter evenly over the layer of black beans.
  5. Place the dish in your preheated oven and bake until the top is golden brown, which should take 30 to 35 minutes.
  6. To serve, spoon salsa and sour cream over individual portions of the hot bake.
