Spicy Black Bean Rice
This one dish meal brings together a wild rice blend with black beans, diced tomatoes and a robust mix of spices including chili powder and cayenne. Diced onions, peppers, jalapenos and garlic are sauteed separately before being combined with the rice mixture and whole chipotle peppers, creating a deeply flavourful and substantial dish.
Ingredients
- 1 tablespoon chili powder
- 1/4 teaspoon cumin
- 1/2 teaspoon basil
- 1/4 teaspoon chili pepper flakes
- 1/4 teaspoon cayenne pepper
- 1 medium bay leaf
- 4 garlic cloves, diced
- 1/4 cup hot sauce
- 2 tablespoons olive oil
- 2 cups long grain and wild rice blend, cooked
- 1 cup canned tomato, diced
- 1 cup canned black beans, rinsed
- 1 large cooking onion, diced
- 1/2 medium green pepper, diced
- 1/2 medium red pepper, diced
- 3 medium jalapeno peppers, finely diced
- 3 medium canned chipotle peppers, whole
Method
- In a large skillet or wok, heat 1 tbsp olive oil and add the cooked rice, diced tomatoes, rinsed black beans, hot sauce, chili powder, cumin, cayenne, bay leaf and chili pepper flakes. Let this simmer for 15 - 20 minutes.
- Take a separate skillet or wok and heat the remaining 1 tbsp olive oil. Cook the diced onion in it.
- Once the onion turns somewhat translucent, stir in the diced green and red peppers, jalapeno peppers and garlic.
- Introduce the whole chipotle peppers and the entire contents of the vegetable skillet to the rice mixture. Stir everything together until well combined.
- This dish tastes great the second day and is not for the faint of stomach.
