Ingredients
- 1 tablespoon olive oil, or as needed
- 0.5 cup reduced fat sour cream
- 1 small fresh jalapeno pepper, minced
- 2 teaspoons fresh lime juice
- salt to taste
- 1 tablespoon olive oil
- 4 green onions, thinly sliced
- 2 fresh jalapeno peppers, finely diced
- 6 cloves garlic, pressed
- 1 tablespoon ground cumin
- 2 (14.5 ounce) cans black beans, drained and rinsed
- salt and black pepper to taste
- 2 cups grated raw sweet potato
- 0.5 cup plain dried bread crumbs
- 1 large egg, lightly beaten
Method
- Position an oven rack roughly 6 inches from the heating element and switch the oven to the broil setting. Use olive oil to lightly coat a baking sheet.
- Prepare the sauce by combining sour cream, minced jalapeño pepper, lime juice, and salt in a small bowl. Place it in the refrigerator, covered.
- For the cakes, warm olive oil in a small skillet. Add the sliced green onions and cook, stirring, for about 1 minute until they soften. Add the diced jalapeños, pressed garlic, and cumin, cooking for a further 30 seconds until aromatic.
- Move the green onion mixture to a large bowl. Add the drained black beans and mash them with a fork. Season with salt and pepper. Incorporate the grated sweet potato, dried bread crumbs, and lightly beaten egg until fully combined. Shape the mixture into eight balls, flatten them into patties, and arrange on the oiled baking sheet.
- Broil the patties for 8 to 10 minutes. Flip them over and broil for another 3 minutes until they are crispy. Serve the warm cakes with the chilled sauce.
