Spicy Black Bean Cakes
These savoury cakes combine mashed black beans with grated sweet potato, jalapeño, cumin and breadcrumbs. The mixture is formed into patties and broiled until crisp and golden brown on each side. They are a simple, protein-rich vegetarian option that can be served with a zesty lime sour cream. The recipe yields eight patties, perfect for four servings.
Ingredients
- 2 tablespoons olive oil
- 4 scallions, thinly sliced
- 6 garlic cloves, pressed
- 1 -2 jalapeno, finely chopped, ribs and seeds removed if desired
- 1 tablespoon ground cumin
- 2 (15 1/2 ounce) cans black beans, rinsed and drained

- 1 large sweet potato, peeled and coarsely grated to equal 2 cups
- 1 egg, lightly beaten
- 1/2 cup plain breadcrumbs
Method
- Turn on the broiler. Warm one tablespoon of the olive oil in a small skillet. Cook the sliced scallions until they soften, which takes about 1 minute.
- Add the pressed garlic, chopped jalapeño and ground cumin to the skillet. Cook for 30 seconds until the aroma is released, then transfer everything to a large mixing bowl.
- Place the rinsed black beans into the same bowl. Use a fork or potato masher to mash them, ensuring roughly a quarter of the beans remain whole. Season well with coarse salt and pepper.
- Gently fold the coarsely grated sweet potato, the lightly beaten egg and the plain breadcrumbs into the bean mixture until combined.
- Divide the mixture into eight equal portions, shaping each into a ball before flattening them into patties.
- Use the remaining tablespoon of olive oil to brush a baking sheet. Arrange the patties on the sheet, leaving about half an inch between them.
- Place the baking sheet under the broiler, about four inches from the heat source. Broil for 8-10 minutes until the tops are golden brown.
- Carefully flip each cake using a thin metal spatula. Return to the broiler and cook for another 2-3 minutes until crisp.
- Optionally, serve the cakes with lime sour cream.
- For the lime sour cream, mix half a cup of sour cream with two teaspoons of fresh lime juice and one small minced jalapeño. Season with coarse salt.
