Spicy Black Bean Burgers With Oats
This recipe offers a flavourful vegetarian burger using black beans and quick-cooking oats as the base. Aromatic onions, jalapeños, and garlic are sautéed with spices before being mixed into the beans. The patties are bound with eggs and fresh cilantro, then pan-fried until nicely browned. They make a satisfying meat-free meal, perfect for serving with your chosen toppings.
Ingredients
- 4 tablespoons oil
- 1 onion, diced
- 2 jalapeno peppers, minced
- 2 teaspoons garlic, minced
- 1 teaspoon Mexican chili powder (mild)
- 1 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 3 (15 ounce) cans black beans, rinsed and drained
- 1 1/2 cups quick-cooking oats
- 2 eggs, beaten
- 1/2 cup chopped fresh cilantro
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
Method
- Place a nonstick frying pan on the heat until hot, then add the oil. Once the oil is warm, put in the diced onion and stir-fry for 5 minutes.
- Mix in the minced jalapeno peppers and continue cooking for another 2 minutes, giving it an occasional stir.
- Add the minced garlic and cook for a further 2 minutes, stirring now and then.
- Switch off the heat and blend in the Mexican chili powder, ground cumin and dried oregano. Take the pan off the heat and allow the mixture to cool.
- While that cools, rinse and drain the canned black beans thoroughly, then transfer them to a large mixing bowl.
- Use a potato masher or fork to roughly mash the black beans.
- Stir the uncooked quick-cooking oats into the mashed beans.
- Combine the cooled onion and spice mixture with the bean and oat base.
- Add the beaten eggs, chopped fresh cilantro, salt and ground black pepper to the bowl. You can adjust the pepper to taste.
- Mix everything thoroughly and shape the mixture into patties. For easier frying, consider making smaller patties to fit smaller buns.
- Heat a frying pan and cook the patties for 4-5 minutes on the first side until well browned. Flip them carefully and cook for about 3 minutes on the other side. Handle gently as they can be fragile.
- Serve the cooked burgers with your preferred garnishes.
