Spicy Beetroot Relish
This Australian relish is a zesty condiment to serve cold alongside grilled meats like burgers, sausages, or lamb. It is prepared by simmering grated beetroot with honey, vinegar, and a blend of warm spices until tender and thick. The recipe yields approximately two jars and can be made in advance for convenience. Remember to wear gloves when handling the beetroot to prevent staining your hands.
Ingredients
- 2 cups beetroots, raw, grated peeled
- 1 tablespoon honey, mildly flavoured
- 1/4 cup red wine vinegar or 1/4 cup cider vinegar
- 1 teaspoon mustard seeds
- 1/4 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- 3/4 cup water
- 3/4 teaspoon salt
Method
- Combine every ingredient in a medium saucepan and stir over a high heat until the honey has fully dissolved.
- Once boiling, lower the heat to a simmer and cook for about one and a half hours, or until the beetroot is tender and the majority of the liquid has cooked off.
- Check the seasoning while the relish is still warm and add more salt if needed.
