Spicy Beer Bread

Ingredients

  • 2 1/2 cups flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1 (9 ounce) bottle pale ale
  • 1/2 cup shredded cheddar cheese
  • 2 scallions, thinly sliced including green part
  • 10 ounces jalapenos, finely chopped
  • 1 tablespoon melted butter

Method

  1. Sift the flour, baking powder and salt into a mixing bowl.
  2. Pour in the beer and combine thoroughly.
  3. Mix in the shredded cheese, sliced scallions and chopped jalapeños until well incorporated.
  4. The resulting batter will be quite stiff.
  5. Transfer the batter evenly into a greased 9x5 inch loaf pan and brush the surface with melted butter.
  6. Bake at 300º for 45 minutes or until it has browned.
  7. Take the loaf from the oven to cool, then cut it into 1/4 inch slices when you are ready.
  8. For serving, place the slices on a baking sheet and broil them for 1 minute or until they turn brown.
