Spicy Beer Bread
This quick bread combines pale ale with sharp cheddar cheese, fresh jalapeños and sliced scallions for a savoury, spicy loaf. The stiff batter is baked until golden, then sliced and broiled briefly for a deliciously crisp texture. It's a straightforward recipe that yields a flavourful bread perfect for sharing.
Ingredients
- 2 1/2 cups flour
- 1/4 cup sugar
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1 (9 ounce) bottle pale ale
- 1/2 cup shredded cheddar cheese
- 2 scallions, thinly sliced including green part
- 10 ounces jalapenos, finely chopped
- 1 tablespoon melted butter
Method
- Sift the flour, baking powder and salt into a mixing bowl.
- Pour in the beer and combine thoroughly.
- Mix in the shredded cheese, sliced scallions and chopped jalapeños until well incorporated.
- The resulting batter will be quite stiff.
- Transfer the batter evenly into a greased 9x5 inch loaf pan and brush the surface with melted butter.
- Bake at 300º for 45 minutes or until it has browned.
- Take the loaf from the oven to cool, then cut it into 1/4 inch slices when you are ready.
- For serving, place the slices on a baking sheet and broil them for 1 minute or until they turn brown.
