Ingredients

  • 1 lb beef tips
  • 1 cup flour, plus 1/2 cup
  • 2 tablespoons hot smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil

Method

  1. Mix together 1 cup of flour with the paprika, cayenne, salt, and black pepper in a shallow bowl.
  2. Pour the vegetable oil into a medium pan and place it on the hob to heat.
  3. Dredge the beef tips in the prepared flour mixture until fully covered.
  4. Fry the coated beef in the hot oil until it develops a good brown colour, then take it out of the pan.
  5. Stir the remaining 1/2 cup of flour into the pan drippings and cook to form a light brown roux, pouring in water until your preferred gravy consistency is reached, which should take about 20 minutes. For extra spice, you could incorporate some of the leftover seasoned flour.
  6. Taste the gravy and adjust the seasoning with additional salt and pepper if needed.
  7. Return the browned beef tips to the pan with the gravy, stirring to ensure they are well covered, and allow to cook for about 15 minutes.
  8. Plate the finished spicy beef tips, ideally alongside a portion of mashed potatoes.
