Spicy Beef Ramen
This warming ramen soup is a perfect speedy dinner. It combines thin slices of beef top sirloin with curly ramen noodles, shiitake mushrooms and edamame beans. The broth is seasoned with a beef flavour packet, soy sauce and Sriracha for a spicy kick, then finished with fresh cilantro. The whole dish comes together in a single saucepan in only 20 minutes.
Ingredients
- 2 cups water
- 1 (3 ounce) package beef-flavored ramen noodles
- 1 cup thinly sliced shiitake mushrooms
- 0.5 cup frozen shelled edamame
- 1 tablespoon reduced-sodium soy sauce
- 2 teaspoons Sriracha sauce, or more to taste
- 1 (4 ounce) beef top sirloin, thinly sliced
- 1 tablespoon chopped fresh cilantro, or to taste
Method
- Place the water in a large saucepan and bring it to a boil. Stir in the ramen noodles and the seasoning packet, cooking for 1 minute. Next, add the mushrooms, edamame, soy sauce and Sriracha, continuing to cook for 1 more minute.
- Introduce the sliced sirloin to the pan. Cook the meat for 1 to 2 minutes until it is firm and the centre is a reddish-pink, juicy colour. For medium-rare, an instant-read thermometer should show 130 degrees F (54 degrees C).
- Divide the finished soup between two bowls. Top with the chopped cilantro and add extra Sriracha according to your preference.
