Spicy Beef-Noodle Bowl
This tasty and light yet filling noodle bowl comes together in 20 minutes. Thin strips of sirloin steak are browned before being simmered in a broth spiked with bottled peanut sauce. Egg noodles and broccoli florets are cooked directly in the mixture until tender, creating a complete meal. It's finished with optional sliced green onions for a fresh garnish.
Ingredients
- 1 lb boneless beef top sirloin steak, cut into thin strips
- 1 tablespoon cooking oil
- 2 (14 ounce) cans reduced-sodium beef broth
- 1/3 cup bottled peanut sauce
- 1 1/2 cups medium egg noodles
- 2 cups broccoli florets
- 1/4 cup bias-sliced green onion (optional)
Method
- Brown the strips of beef in the hot oil using a dutch oven.
- Pour in the beef broth and peanut sauce, then bring the liquid to a boil.
- Mix the egg noodles into the pot and lower the heat. Let it simmer without a lid for 4 minutes, giving an occasional stir to keep the noodles apart.
- Add the broccoli florets and bring everything back to a boil. Reduce the heat again and simmer uncovered for another 3 to 4 minutes, or just until the noodles are tender, stirring now and then.
- Portion the beef and noodle mixture into four individual bowls. You can top each serving with the optional green onions if you like.
