This hearty Mexican dish layers seasoned ground beef with tortilla chips, two types of cheese, and plenty of zesty toppings like pickled jalapeños and diced vegetables. Baked until the cheese is perfectly melted, it is a crowd pleasing option ideal for casual meals. Spicy Beef Nacho Supreme

Ingredients

  • 1 lb ground beef
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup red onion, diced
  • 1 tablespoon chipotle chile in adobo (puree)
  • 2 garlic cloves, pressed
  • 1 (4 ounce) can diced green chilies
  • 1 tablespoon taco seasoning
  • 1 teaspoon oregano
  • 1 (908 g) bag tortilla chips
  • 1/2 cup red pepper
  • 1 (2 1/4 ounce) can sliced black olives
  • 2 cups cheddar cheese, grated
  • 2 cups monterey jack cheese, grated
  • 30 pickled jalapeno peppers
  • 1 tomatoes, seeded and diced
  • 2 green onions, sliced

Method

  1. Place the ground beef in a large skillet and season it with the salt and black pepper. Cook the meat, breaking it apart as it cooks, until it is partially done. Mix in the diced red onion and cook for about 4 minutes until the onion is soft. Drain the mixture in a colander, then return it to the skillet.
  2. Stir the chipotle purée, pressed garlic, diced green chilies, taco seasoning and oregano into the beef. Combine everything thoroughly, then take the skillet off the heat. Turn your oven on to preheat to 400ºF.
  3. For the first layer, arrange a portion of the tortilla chips over the base of a deep dish pizza pan. Distribute half of the beef mixture on top, followed by ¼ cup of the red pepper and half the can of sliced black olives. Sprinkle over 1 cup each of the grated Monterey Jack and Cheddar cheeses.
  4. Create a second layer with more tortilla chips, the rest of the beef mixture, the remaining ¼ cup of red pepper and the rest of the black olives. Scatter about 15 pickled jalapeño peppers across the top, then cover everything with the remaining 2 cups of mixed cheeses. Add another 15 or so jalapeño peppers.
  5. Bake the assembled dish in the preheated oven for 7 minutes, or until the cheeses have melted and the contents are hot. Take it out of the oven and finish with the diced tomato and sliced green onions. Serve immediately with salsa, guacamole, refried beans and sour cream.
