Ingredients
- 13oz / 400g beef rump steak (, trimmed, thinly sliced)
- 2 tbsp Homemade Chinese Stir-fry Sauce ((Note 1))
- 1 1/2 tbsp peanut oil
- 1 1/2 tbsp peanut oil
- 2 garlic cloves (, crushed)
- 1 small onion ((brown, white or yellow))
- 1 red capsicum/bell pepper (, sliced)
- 1/3 cup Homemade Chinese Stir-fry Sauce ((Note 1))
- 3/4 cup water
- 2 tbsp chilli paste (, hot sauce, sriracha (to taste) OR finely chopped chilli)
- 3 scallions/shallots (, cut into 3cm lengths)
- 7oz / 200g snow peas (, trimmed)
- 15oz / 450g fresh hokkien noodles (, from the fridge section)
- Sliced red chilli (, sliced scallions/shallots and toasted sesame seeds)
Method
- Combine the sliced beef with 2 tbsp of the Stir-fry Sauce in a glass or ceramic bowl. Allow this to marinate for 20 minutes.
- Prepare the fresh hokkien noodles according to the directions on the packet. Drain them in a colander and rinse under cold tap water to wash off extra starch, then shake the colander to remove water.
- Warm 1 1/2 tbsp of peanut oil in a large wok. Cook the marinated beef for 1 1/2 minutes until just done, then move it to a separate bowl.
- Heat another 1 1/2 tbsp of oil in the wok. Fry the crushed garlic and onion for 30 seconds, then add the sliced capsicum and cook for 1 minute. Transfer this mixture to the bowl with the beef.
- Pour 1/3 cup of Homemade Chinese Stir-fry Sauce, the water, and the chilli paste into the wok. Let it cook for 30 seconds until it begins to thicken. Add the scallions and snow peas, cooking for a further 30 seconds.
- Place the beef and capsicum mixture back into the wok. Add the prepared noodles and stir fry everything together for 1 minute 30 seconds, ensuring all components are coated in the sauce.
- Dish up the noodles immediately. You can garnish them with sliced red chilli, extra scallions, and toasted sesame seeds if you like.
