Spicy Beef Flatbread With Yogurt & Cucumbers
This dish features grilled pizza dough topped with a richly spiced beef mixture. The beef is cooked with cinnamon, cumin, and paprika, then combined with red onion. The flatbreads are finished with a lemon yogurt sauce, sliced cucumbers, and fresh cilantro for a complete meal. It takes roughly 60 minutes to prepare and serves eight people.
Ingredients
- 1 1/2 cups whole milk yogurt
- 1 tablespoon fresh lemon juice
- kosher salt, freshly ground black pepper
- 4 garlic cloves, finely grated
- 1/2 cup tomato paste
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground cumin
- 2 tablespoons hot spanish paprika
- 1 1/2 lbs ground beef
- 1/4 cup extra virgin olive oil
- 1 medium red onion, thinly sliced
- all-purpose flour (for dusting)
- 1 lb prepared pizza dough, cut in half, room temperature
- cornmeal (for dusting)
- 2 Persian cucumbers, thinly sliced
- cilantro leaf (for serving)
- vegetable oil (for brushing)
Method
- Get a grill ready for medium-high heat, ensuring the grates are clean and oiled. Combine the yogurt and lemon juice in a bowl, seasoning with salt and pepper. Set this mixture aside.
- In a large bowl, combine the garlic, tomato paste, cinnamon, cumin, paprika, and 2 1/2 teaspoons salt. Add the ground beef and 2 tablespoons of olive oil, mixing thoroughly. Heat the remaining 2 tablespoons of oil in a large skillet on the grill or stove. Cook the beef mixture for 12-14 minutes, stirring and breaking it up, until browned. Add the sliced onion and cook for about 2 minutes, then set aside.
- Turn the grill up to high heat. On a floured surface, stretch each piece of dough into a 12- x 10-inch oval. Place them on a cornmeal-dusted peel or sheet. If the dough resists, let it rest for 10 minutes before stretching again. Grill the dough over direct heat for about 2 minutes per side, until charred and cooked. Let the flatbreads cool slightly before topping evenly with the beef. Finish with dollops of the yogurt mixture, cucumber slices, and cilantro leaves.
