Spicy Beef Casserole
This hearty spicy beef casserole is a classic curry dish, ideal for a comforting family meal. Beef cubes are first browned, then combined with softened onions, tomatoes, and a blend of warming spices. Everything is enveloped in a tangy, sweet sauce featuring chutney, tomato sauce, and apricot jam before being covered and baked slowly until the meat is perfectly tender. It serves six and takes around 130 minutes to prepare and cook.
Ingredients
- 1 kg beef, cubes (chuck,sirloin or shin)
- oil (for frying)
- salt & freshly ground black pepper
- 2 large onions, finely chopped
- 6 tomatoes, skinned and finely chopped
- 30 ml sugar
- 5 ml cinnamon
- 3 ml ground ginger
- 3 ml turmeric
- 30 ml oil
- 30 ml vinegar
- 30 ml Worcestershire sauce
- 125 ml tomato sauce
- 125 ml chutney
- 15 ml mild curry
- 2 ml mustard powder
- 30 ml apricot jam
- 1 bay leaf
- salt & freshly ground black pepper
Method
- Set your oven to heat to 160 ºC (325 ºF).
- Lightly coat a large ovenproof dish with non-stick cooking spray.
- Cook the beef cubes in hot oil until they develop a golden brown colour.
- Add salt and freshly ground black pepper for seasoning.
- Place the browned beef into the prepared dish.
- In the same pan, cook the finely chopped onions in a little oil until they are soft and translucent.
- Stir in the skinned and chopped tomatoes.
- Season the onion and tomato mix with sugar, cinnamon, ginger, and turmeric, then stir-fry the mixture for a few minutes before adding it to the meat and combining.
- Combine all the remaining sauce ingredients thoroughly and pour this mixture over the meat.
- Mix everything together, cover the dish, and bake in the oven for about 1 1/2 to 2 hours or until the meat becomes tender.
- This casserole is lovely served with rice or mashed potatoes.
